Make Traditional Malva Pudding

Malva pudding is a sweet South African pudding. My grandmother use to make the pudding for us on Sunday's. The pudding contains apricot jam and has a spongy caramelized texture. A cream sauce is poured over it while it is hot, and it is usually served hot with custard and/or ice-cream.

Malva Pudding Recipe

Ingredients

250ml sugar
15ml butter
1 egg
12.5ml apricot jam
15ml vinegar
5ml bicarbonate of soda
250ml milk
250ml cake flour
Pinch of salt

Method

Preheat oven to 180 ° C. Grease ovenproof container. Cream the sugar and butter together. Add the egg, apricot jam and vinegar and beat well. Dissolve the bicarbonate of soda in the milk and add to the egg mixture. Add the flour and salt to the mixture and mix well. Pour the batter in the ovenproof container and bake for 30 minutes until golden brown.

Sauce Ingredients:

250ml cream
250ml sugar
125ml butter
125ml boiling water
5ml vanilla essence

Method

Boil cream, sugar, butter, and water together, until the sugar is melted. Add vanilla essence to the sauce,  pour sauce over hot pudding and allow to cool. Serve with Ice cream or custard
